Astaxanthin is one of carotenoids which show an antioxidant effect and its efficacy is 100 to 1,000 times higher than vitamin E.  Astaxanthin is commonly contained in crustaceans such as shrimp and crab, and marine organisms such as salmon, salmon roe, krill and alge.  It is found in the free state and in the ester form and also exists as a chromoprotein which is conjugated with protein.  Since the chromoprotein is unstable, overheating and use of organic solvents will cause it to degrade and turn red.
